Avocado, Spinach and Ricotta Wraps

Best dish I ever made so far to be honest!

It is creamy, healthy and it is easy to make. You really don’t need to be a cooking princess (or prince) to get these ones wrapped up on table. And your guests are gonna love it.

Make it in advance

Many steps can already be done in advance so you only have to put it in the oven when your guests arrive.
Neither do you have to worry about the folding of a wrap, because the cheese will hold them together anyway.

If you choose to make this without the Cheesy topping, then suggest to drizzle the wraps extra with olive oil. Or maybe to use toothpicks in the middle.

You can also perfectly make this dish veggie by leaving out the chicken or replacing it with some baked Tofu.
The options are endless.

  1. Start with roasting the Pine Nuts in a pan. Grill the Chicken with Chicken herbs. Put aside.
  2. Cut the Spinach into small pieces. Cut the Avocado in two.
  3. Preheat the oven to 195°C. Take an oventray and sprinkle it with olive oil.
  1. Put the Ricotta, the Spinach, 1/2 Avocado and 1/2 Lemon and the roasted Pine Nuts in a large bowl.

  2. Shortly preheat the tortilla wraps in the microwave so they are more easy to fold.
  3. Take 1 tortilla and mix the Ricotta mixture in the middle. Add about 100gr of grilled Chicken. Do the same for the others.

  4. Fold the tortilla wraps and put them into the tray for the oven.
  5. OPTIONAL: Cover the wraps with cheese.
  6. Put in the oven or under the grill for about 5-7 minutes. Stay close to the oven so check if the wraps (or cheese) doens't burn.
  7. Serve with the other half of Avocado for a fresh touch.

    Inspired by your recipe but I did it a bit differently, more like an enchilada without tomato than a snack wrap. Here’s what I did:

    Where you used pine nuts, I used pinto beans. Our son is allergic to nuts.

    I mixed two cans of canned white meat chicken breast, one can of pinto beans, and a chicken taco seasoning packet in a mixing bowl. In a separate mixing bowl, I mashed two ripe avocados and mixed them with about 12 fl ounces of skimmed milk ricotta cheese. I put a guacamole seasoning pack in this and mixed it together thoroughly before adding a pound of finely chopped spinach, which I thawed and drained before incorporating the chicken and beans mix in with the spinach, avocado, and cheese mix, stirring thoroughly.

    I wrapped them up in tortillas the way you did, laid them all into the glass baking pan, and then spooned a tablespoon of restaurant style mild salsa over the top of each one. I topped this with shredded cheddar and monterey jack cheese and baked it at 375F for 15 minutes.

    The recipe I used was for a larger family, and we served seven with enough left over for tomorrow (unless they snack overnight.)
